The cooperative San Vito uses only fresh cow’s milk exclusively from neighbouring farms to produce this Asiago cheese. The rapidity of processing after milking gives the cheese its characteristically fresh and lactic taste. Production is entirely by hand. The curd is cut with a cheese wire and the wheels are turned over manually by the cheesemaker. The smooth paste has marked holes, the colour is straw yellow, with a mild delicate flavour and the cheese melts in the mouth leaving an irresistible sweet and slightly acidic note.
