Tomme de Chevre Severac
Description
This semi-hard cheese made from pure goat‘s milk comes from the dairy in Severac-Le- Château, a small village with 700 people, north of Aveyron, near to the Tarn gorges. During its 2 to 3 months ripening process, it is washed regularly with salt water and thus has an attractive orange-coloured rind and a delicate flavour.
The crunchy crust of fresh bread will be the perfect companion and will bring a complementary texture to contrast with the richness of the taste of the cheese. Also, try our figs or quinces confits to bring a sweet and sour touch. Ideal as an aperitif served with a Beaujolais or a white dry wine like Cote du Roussillon.
