Fondue has been well known for centuries. In former times, old, dried-out cheeses were melted, with the addition of wine and, once melted, hard dry bread was dipped into the melted cheese. Nowadays, fondue is well known and enjoyed throughout the world. The “moitié-moitié” (half-and-half) fondue is a connoisseur’s speciality. This is a mixture of Gruyère and Vacherin which has a fine, well-balanced flavour! It's a delicious meal, simple to prepare and ready in a few minutes (all you need to do is melt it)!
It pairs well with a crisp dry white such as Roussette from Savoie, Muscadet, Chablis or dry Alsace Riesling.
