Mimolette Vieille Cesar Losfeld
Description
Known to be the favourite cheese of French President, Charles De Gaulle, Mimolette is traditionally produced around the city of Lille. In France, it is also known as Boule de Lille after its city of origin, or vieux Hollande for being made after the tradition of Edam cheese.
Mimolette is this round hard cheese, with a bright orange paste, and a characteristic moon-like surface. When young it delivers a great nutty taste, which becomes more intense when aged and get strong, tangy with citrus and roasted nuts.
Mimolette Extra Veille pairs extremely well with either dessert wines or lighter reds such as Rhones or Pinot noirs.
