Legend has it that the papillote was created in 1790 in the shop of the Lyon pastry chef Sieur Papillot. His apprentice, head over heels in love with this pastry chef's daughter, offered his sweetheart chocolates wrapped in sweet messages. Noting the disappearance of his sweets, Sieur Papillot suspected his clerk, spied on him and recognized him as the author of the crime. Charmed by the idea, he took it over on his own and replaced the statements with quotes… The papillote was born!
