Eaux de Vie
Eau de Vie is the French expression that translates to “Water of Life” and is used to describe a clear fruit brandy that is fermented and double distilled.
The process starts with crushing the fruit and fermenting for several weeks. It is then heated in a still and the alcohol vapour is cooled down into a liquid. The spirit then ages is a steel or glass container (not barrel aged as a clear liquid is the objective) for a few months. Lastly, the spirit is mixed with water to arrive at the desired alcohol level.
The outcome is a clear Eau de Vie where the fruit flavour is typically very subtle.
